Inoke is the Owner & Operator of the

Blue Coconut BBQ Food truck.

As a kid, he was taught how to roast pigs underground and how to rotisserie cook octopus legs with his Dad... just like his Dad did when he was little, on the tiny little islands of Tonga.

This South Pacific Island, near Samoa & Fiji, has a long culinary history of combining the flavors of visiting cultures, to create dishes unique to them. Which is how Inoke can throw together things that you never thought would work into something spectacular!

This truck is a true family affair, and you will most likely see wife, Angie, and one or more of the kids helping on the Food Truck, who are shaping up to be pretty good prep-cooks!
